This is my spring/summer plan.  It is a two month menu.  I will be doing a prep day and an assembly day.  My winter/fall menu plan is here.  I am now doing two months at a time menu plans and it is working really well.  I may not do every meal fully as a freezer meal, but I do cook the meat ahead and other ingredients to make it quick and easy to assemble the night of. I will post an actual list of what I am doing tomorrow with the prep day instructions and the assembly day instructions.

As far as menu planning, I tried to have a theme each night and also I tried to have 2 chicken dishes, 2 beef dishes and then 2 “other” dishes.  Each day has 8 meals under it.

Breakfast:

Sourdough Pancakes

Sourdough Muffins

Baked Oatmeal

Easy Breakfast quesadillas

Lunch: (most of the lunches are also suppers so I will just double suppers for lunches)

Chicken Fried Rice

Vegetarian Tostadas

Marvelous Mini Meat loafs

Black Bean Burgers and homemade buns

Quesadillas with leftover meat or chicken

Sloppy joes

Suppers:

Monday – Stir Fry/Salad/Chinese

  1. Freezer Sweet and Sour Chicken Stir Fry
  2. Beef Kabobs
  3. Beef and Broccoli Stir Fry with Stir Fry veggies
  4. Chicken Bombay (2)
  5. Sesame Chicken
  6. Baked potato night and baked beans (2)

Tuesday – Italian/Ethnic/Pasta

  1. Southwest Chicken Salad
  2. Teriyaki Pork Chops (2)
  3. Pepperoni Lasagna Roll Ups
  4. Crock Pot Chicken with black bean and cream cheese
  5. Alfredo Lasagna or manicotti (2)
  6. Chicken and Spinach with penne

Wednesday –  Sandwiches/Crock pot

  1. Zesty BBQ Slow Cooker Chicken
  2. Sloppy Joes (2) and sweet potato sticks
  3. Tangy BBQ Pot Roast (2)
  4. Bacon Jack Chicken Sandwich
  5. Pacific Chicken (recipe below)
  6. Black Bean Burgers and homemade buns

Thursday – Mexican/Chicken/Casserole

  1. Bacon and Cheese Chicken in the Crock Pot  with cajun baked sweet potatoes
  2. Tacos/Nachos (2)
  3. Chicken Taco Casserole
  4. Taco Braid (2)
  5. Vegetarian Tostadas
  6. Marvelous Mini Meat loafs

Friday – Pizza/Leftovers

Saturday – Grill Night

  1. Best Grilled pork chops
  2. Eric’s Easy Grilled Chicken
  3. Honey glazed Dump chicken
  4. Perfect marinade for grilled steaks (2)
  5. Hamburgers (2)
  6. Pork chop/apple/sweet potato foil bake on grill

Sunday Dinner

Pacific Chicken
4 chicken breasts
1/2 C. soy sauce
2 T. brown sugar
2 t. ginger
2 gloves garlic, minced
wash & dry chicken and put in crock pot.
combine rest of ingredients and pour over chicken.
Cook on high 1 hr.  Cook on low 6-7 hours.
Serve over rice with a salad.
